I am behind on virtually everything.  Doesn't that seem to happen in summer?  So many things to do and so very little time.  I'm trying to get caught up on blog/facebook reading this weekend.

The chicks have been moved to their own section of the coop.  They love it.  Dust bath's, flying {as much as the chunky clumsy chicks can, which isn't much}, exploring and enjoying the sun make them very very happy.  The big girls are a bit put off by the cheerful and chipper little chirps but they'll get over it.  We celebrated the move with watermelon - all the chickens favorite fruit.

I've successfully avoided going to town this weekend since the traffic is at an all-time high with the Whitney Stakes {horse racing} taking place on Saturday.  The town, which is busy enough with summer visitors, gets absolutely packed for the 2 major races of the summer and this was one of them.  We stayed home.

I had hoped to can pickles this weekend.  That hasn't happened.  Maybe next weekend.  We are, however, picking cukes by the bucket full.  So crisp and delicious!  The kohlrabi is getting close to being ready as is the corn.  The eggplant is about a month away.  We've been collecting broccoli, green beans, tomatoes, peas, summer squash, beets, lettuce, scallions, sugar snaps {the last of this batch}, herbs and peppers in addition to cukes.

I have a wild baby bunny who has taken up residence in my corn/cucumber patch.  He is absolutely adorable.  I think something must have happened to it's mother because it's awfully young to be out on it's own.  We made an agreement one evening while he was taking shelter between the cornstalks and I was picking cucumbers.  He'll eat all the grass he wants and only select veggies - not bites out of all of them, and he can live in the garden.  So far he's made good on his promise.  From time-to-time I pick a cucumber or squash with little bites in it and I know he's been out and about.  The Coop Girls and Chicks are recipients of such discarded goodness.  They cheer him on to test out more veggies.

This weekend's cooking and baking is all about zucchini.  The last 2 weeks was all about blueberries {recipes to be shared this week} so why not move on to the beautiful green squash growing so prolifically?  Today I'm making Chocolate Zucchini Cake {our FAVORITE}, Lemon and Blueberry Zucchini Bread for the freezer, and Zucchini Gratin for dinner.  {I will try to get the last 2 recipes on the blog soon}.  Next weekend I may make Zucchini Crumble - tastes just like apple crumble.

On the menu this week:  Smoked BBQ Chicken Quarters with Mac & Cheese and Corn-on-the-cob; Grilled Red Snapper with Pasta and Garlic Scape Pesto and Zucchini Gratin; Beef and Bean Burritos with Cilantro Sour Cream, Homemade Salsa and Mexican Rice; Spaghetti and Meatballs with Ciabatta Bread and Green Beans; Grilled Marinated Chicken Breast with Rice and Sauteed Sugar Snap peas; Grilled Marinated Steak with Homefries and Broccoli.
