We decided to have a "lazy weekend".  The weather has been colder than in weekends past and it just seemed the perfect thing to do.  No big surprise that the animals were pretty happy about this type of weekend.  All except the chickens.  They really enjoy when we're out working in the yard while they're running around.  They do love to chat.

It was a weekend spent cooking, baking, reading and relaxing.  It's been quite sometime since we've had one like this.  We went grocery shopping Saturday night for my monthly shopping and dinner to my Mom's Saturday as well, but other than that, we never left the house.

I made stromboli for the first time on Saturday.  It turned out really good.  I used pizza dough I had in the freezer, thawed it, layered it with 2 T. of tomato sauce then layered meat and cheese, rolled it up and baked it.  Delicious.  I also made Oreo Truffles, Taco Soup, Meatloaf, rolls and more.

We now have regular below-freezing nights which meant I had to pick the last of the garden - herbs, kohlrabi, brussels sprouts, and scallions.  I haven't pulled all of the carrots yet but will be doing so this week.

This weekend was also for reflection.  On where we are, where we've been and where we want to go.

Hoping you had a lovely and relaxing weekend too!

I scoop out his potato and mix it with a little butter, milk, and cheese (as I would for a twice baked potato), but I don't bake it a second time. Instead, I spoon it back into the...

Freezer Cooking 101: A Beginner's Guide Part 1 of 3

February 21, 2018

This is the first of a 3-part series on Freezer Cooking.  I got hooked on freezer cooking a couple of years ago.  While we don't eat the majority of our meals as freezer meals, I love counting on them at least once or twice a week as well as having a meal or two extra that's handy if I've forgotten to take something out.

Finding ways to simplify mealtime has become incredibly popular, and for...

$100.00/Week Real Food Meal Plan - Week 8

February 19, 2018

If you’re just tuning in, this is an ongoing series in which I share our weekly meal plan as I (attempt) to convert us to a Whole/Real Food lifestyle.  Our grocery budget is $100.00/week for 2 adults.  Often I make 2 different meals because I am primarily plant-based and my husband is not.  Most of what we eat is made from scratch and any boxed, canned and/or frozen products follow the Real Food...
