It's hard to believe the end of January is here at last.  It's even harder to believe that Christmas was only a month ago.  My, it seems like it was months and months ago.

Well, it's been a fairly busy weekend around here.  I finished up Valentine's Day cards for a card swap over at Country Pleasures.  I'll be mailing them out in another week or so and looking forward to opening the mailbox each day to discover Valentines coming to me as well.

The big boys had a birthday.  Can you believe Emerson and Oliver are 3????  I don't know where the time goes.  They are still my babies, regardless of their age.  I made them an Apple Cake {dog-friendly, of course} for their birthday.  I told them the day was all about them.  They chose to eat, sleep, and hunt down strange smells and tracks they found in the snow in the backyard.  The tracks led to yet another chocolate doughnut.  Initially, we thought someone had left a couple of chocolate doughnuts out for squirrels, but because we've found so many of them, I believe squirrels may be getting into someone's garbage.  Someone who apparently loves doughnuts.

I've decided my January project is going to be soy-based candles.  I wanted to try something new each month, and this is what I've decided on.  I've ordered the supplies and can't wait to give it a try.  It looks easy enough - I'm going to use pint canning jars for the containers.

I'm also going to attempt the cloth baggies and sandwich bags I featured in last Tuesday's "Three" post.  I don't sew....which should make it interesting.  I figured there's no better time than the present to learn, and this will be my learning project.

Smells this weekend have included an oven-baked omelet, slow-cooker sweet and spicy wings, homemade pizza, homemade chicken noodle soup, dog-friendly apple cake, oatmeal sandwich bread, homemade coffee-flavored yogurt, slow-cooker apple sauce, and brownies.

I'm trying slow-cooker green bean casserole as a side dish tonight.  Jay doesn't have high hopes for it but you never know until you try it!

I had the tv on in the kitchen one day a few weeks ago, listening as I was cooking, and Paula Deen was making a dessert of brownies, raspberry jam and a homemade whipped cream that had vanilla pudding in it. It sounded good so I scribbled down the whipped cream recipe.  Well, I thought of it this weekend and decided I would layer the items in small mason jars for lunch snacks this week.  The whipped cream recipe is 3 cups heavy cream, 3 Tablespoons instant vanilla pudding, 1 Tablespoon powdered sugar, and 2 teaspoons vanilla extract.  Mix with an electric mixer on medium-high until it reaches the consistency you desire.

The chickens are doing very well in the egg laying department despite the limited sunshine.  The temp's will be dropping to highs in the single digits or low teen's this week.  I suspect production may slow.  The red sexed-link chickens, which are the newer girls, are laying amazingly large eggs.  I'll try to take some pictures this week.
